Story: Cabernet Sauvignon is a hidden gem of the McLaren Vale wine region.
Although not region people automatically think of when speaking about
Cabernet Sauvignon, it often produces some of the highest rating Cabernets in
the country.
Vineyard: This wine is a blend of two McLaren Vale vineyards; Symonds vineyard located in Whites Valley, a warmer subregion of McLaren Vale between Willunga and Sellicks Hill and Price's Gateway Vineyard at the northern entrance of McLaren Vale.
Soils: The Symonds vineyard is on Urrbrae Loam, which is loam over red clay part of the Christies Beach Formation from the Pleistocene period (2.6 million - 11,700yrs old). The Gateway vineyard soils are siltstone and rocky and originate 650 million years ago from Reynella Siltstone.
Harvest Dates: 14 March 2025 (both vineyards)
Winemaking: Crushed and destemmed. Fermented for 9 days on skins in static stainless steel fermenters with twice daily cap management. 10% new French Oak Hogsheads and 90% Seasoned in French Oak.
Nose: Dark berry and cassis notes on nose with leathery oak notes.
Palate: Savoury varietal complexity on the palate with long elegant tannin
structure.
Cellaring: Drink now to 2030
